Healthy Pickled Beets Recipe

  • 10 minutes (plus cooking time for beets)

  • Chill time: at least 2–4 hours (better overnight)

📝 Ingredients:

  • 8 medium beets, trimmed and scrubbed

  • 1/2 cup apple cider vinegar (or red wine vinegar)

  • 1/2 cup water

  • 1–2 tbsp honey or maple syrup (adjust to taste)

  • 1/2 tsp salt

  • 1/2 tsp black peppercorns

  • 1/2 tsp mustard seeds (optional)

  • 2 cloves garlic, peeled and smashed (optional)

  • 1 small bay leaf (optional)
